There are probably people hanging around the bus station and the main tourist areas who will offer to take you to a casa. (They will be doing this for a fee, so may not be impartial.) If you have enough time, just wander around looking for the casa particular sign. I don't think that they publish that sort of thing in the tourist guides. I know that there are signs on the doors of the casa particular and a buddy of mine traveled around Cuba that way.
